Like all grilled dishes, the Grilled Eggplant in Oil and Sea Salt must be served immediately to relish the crispness of the grilled eggplant.

Ingredients
  1. 8 thick eggplant slices
  2. 3 tsp coconut oil or palm oil
  3. sea salt to taste
Instructions
  1. Heat a grill pan with 2 tsp of oil and arrange 8 slices of eggplant on it and cook on a medium flame for 4 to 5 minutes or till it becomes light brown in color from both the sides.
  2. Transfer them on a serving plate and drizzle the remaining 1 tsp of olive oil and sea salt evenly over all the grilled slices.
  3. Serve immediately.
